Cafeteria Lead 
 


BASIC FUNCTION & RESPONSIBILITY: 
Work under the Cafeteria Manager to run the food service program at school according to departmental policies and procedures and National School Breakfast/Lunch and or Snack Program guidelines. Provide leadership, support, and guidance to staff to ensure food quality, safety standards, and customer service expectations are met. Oversee appropriate quantities of food are prepared and served daily. Meet time constraints for the preparation of all menu items and ensure recipes are prepared as required by the Department. Comply with health codes issued by city, state, and federal agencies. Maintain high standards of quality in food production, sanitation, and safety practices.

CHARACTERISTIC DUTIES & RESPONSIBILITIES: 
  • Train, supervise and evaluate kitchen staff to perform duties as required by the Department. Foster and promote a teamwork environment that will contribute to the operation of a successful kitchen.
  • Monitor all serving schedules and ensure that all food items are served according to menu specifications defined by departmental guidelines. Ensure quality of all products.
  • Provide guidance and instruction to employees in relation to food preparation service, storage and cleaning.
  • Perform duties of other food service personnel as needed, including preparing, serving and cleaning food production area and/or equipment, and cashiering.
  • Adhere to merchandising standards and ensure that all food products are served and displayed neatly and appropriately.
  • Comply with the monitoring of daily production records, day-end reports, Hazard Analysis and Critical Control Points (HACCP),quality assurance audits, and day-end procedures.
  • Follow established deposit and cash handling procedures.
  • Maintain required records including food production reports, cash receipt reports, and inventory reports.
  • Provide invoices to accounts payable in a timely manner for processing.
  • Help manager forecast and plan the ordering of food and supplies from approved vendors. Verify receipt of all orders at the time of delivery.
  • Help manager conduct inventory on a monthly basis and continuously monitor inventory levels according to department standards.
  • Ensure minimal waste of food and supplies by accurately maintaining production records and forecasting.
  • Ensure that all equipment including registers computers and kitchen equipment are working properly. Report any problems to the appropriate personnel.
  • Help manager oversee employees to ensure policies and procedures are being followed as outlined in the Employee Handbook or in other District and Department policies.
  • Maintain employee work schedules, monitor attendance and follow appropriate procedures to request on-call staff when needed.
  • Communicate developing trends and observations in an effort to increase the level of customer satisfaction and participation in the lunch and/or breakfast and snack.
  • Provide assistance to campuses/departments as requested.
  • Other duties as assigned.
ENTRY QUALIFICATIONS: High school diploma and equivalent to two years of related experience. Must maintain Managers Food Handler certification as required by Montgomery County Health Department.

PHYSICAL & MENTAL DEMANDS:
  • Use kitchen equipment, including electric slicer, mixer, tilt skillet, ovens, steamers, sharp cutting tools and cleaning chemicals.
  • Use cash register and adding machine.
  • Handle money and change.
  • Stand, walk, push, and pull weight on a continual basis.
  • Use hands continually to include grasping, both firm and light, kneading, keying and exposure to chemicals and water.
  • Lift and carry up to 40 lbs. from floor to chest and overhead.
  • Stoop, bend, kneel and climb frequently.
  • Travel throughout the district on an occasional basis.
